Dried Celery Root (Celeriac)

Versatile in Human & Pet Food Applications

Celery root, otherwise known as celeriac, has been grown domestically for thousands of years. It is believed to have originated in the Mediterranean basin and is one of the oldest root vegetables in recorded history. Though celery and celeriac may have originated from the same wild celery species, today they are harvested from two separate varieties – one grown for the tall, green stalks, and the other for the white-fleshed root.

Celery root has a similar flavor to celery stalks and makes an excellent ingredient for paleo flour or dog food due to its mild flavor and starchy composition. A healthy substitute for potato, it’s packed with fiber, vitamins B6, K, immune-supporting vitamin C, antioxidants, and minerals such as phosphorus, potassium, and manganese. Studies show that celery root may support heart, digestive, bone, and cellular health(1).

Celery root pairs well with garlic, chives, and lemon peel. Our air-dried celery root ingredients make excellent additions to paleo applications including crackers and other snacks, Instant Pot meal kits, soups, stews, and seasonings. Celeriac is also a healthy addition to wet and dry dog food, toppers, and treats.

  • Dehydrated Celery root is prepared from freshly harvested celery root which has been washed, trimmed, sliced, either sulfited or treated with Citric Acid, dried, and finished processed.
  • This product complies with current Good Manufacturing Practice in Manufacturing, Packaging, and Holding Human Food (21 CFR 117), and with the Code of Hygiene Practice for Dehydrated Fruits and Vegetables (CAC/RCP-5-1971, Rev. 2-1985), General Principles of Food Hygiene (CAC/RCP-1969, Rev 2-1985).
  • Product shall be free of ferrous and non-ferrous metal >1.0mm, 300 series stainless steel >1.5mm. Practically free of extraneous vegetable matter and other foreign material based on processing capabilities.
  • Product is Kosher.

Color: Creamy white.

Hydration (Diced): Allow 5-7 minutes for dices in boiling water, and 1-2 hours in cold water. The typical re-hydration ratio is about 1:18 (dry: fresh).

Storage:

  • Recommended storage is in a cool dry area.
  • Shelf life under normal conditions is 24 months.
