Cabbage is a cruciferous vegetable and type of mustard green. Because the inner leaves are very pale green and nearly white, green cabbage is also known as white cabbage. Raw, it has a peppery flavor that mellows and sweetens when cooked. It pairs well with apple, carrot, and lemon peel.

Cabbage is high in immune-supporting vitamin C, as well as soluble fiber, folate, potassium, magnesium, vitamins A and K, and more. It’s also loaded with phytonutrients. Studies have shown that cruciferous vegetables including cabbage may support a healthy inflammation response.1 Prebiotics such as cabbage are growing in popularity as their relationship with probiotics is becoming more widely understood in digestive health and immune support.

  • Dehydrated cabbage is prepared from fresh cabbage that has been washed, cored, trimmed, diced, blanched, dried, and finish processed.
  • This product complies with current Good Manufacturing Practice in Manufacturing, Packaging, and Holding Human Food (21 CFR 117), and with the Code of Hygiene Practice for Dehydrated Fruits and Vegetables (CAC/RCP-5-1971, Rev. 2-1985), General Principles of Food Hygiene (CAC/RCP1969, Rev 2-1985).
  • Product shall be free of ferrous and non-ferrous metal >1.0mm, 300 series stainless steel >1.5mm.
    Practically free of extraneous vegetable matter and other foreign material based on processing capabilities.
  • Product is Kosher.

Color: Light green/yellowish-green to off white with occasional brown.

Hydration: Allow 3-6 minutes for flakes in boiling water, and 1-2 hours in cold water. Typical re-hydration ratio is about 1:6.5 (dry: fresh).


  • Recommended storage is in a cool dry area.
  • Shelf life under normal conditions is 24 months.
