Cauliflower has a neutral flavor that is nutty and sweet with a slightly bitter undertone. Originally from the middle east, this cruciferous vegetable has been a staple worldwide for centuries. Recently, it’s gained popularity as a starch substitute and is often used in place of rice or as a main ingredient in pizza crusts and tortillas. Cauliflower pairs well with broccoli, carrots, and garlic.
Cauliflower is low-calorie, low-carb, and high in fiber. It’s also nutrient-dense, containing some amount of almost every vitamin recommended to us1. Studies have shown that cauliflower and other cruciferous vegetables may support a healthy inflammation response.2 Prebiotics such as cauliflower are growing in popularity as their relationship with probiotics is becoming more widely understood in digestive health and immune support.

- Dehydrated Cauliflower is prepared from fresh cauliflower stalk and/or florets which has been washed, trimmed, blanched, cut, dried, and finished processed.
- This product complies with current Good Manufacturing Practice in Manufacturing, Packaging, and Holding Human Food (21 CFR 117), and with the Code of Hygiene Practice for Dehydrated Fruits and Vegetables (CAC/RCP-5-1971, Rev. 2-1985), General Principles of Food Hygiene (CAC/RCP1969, Rev 2-1985).
- Product shall be free of ferrous and non-ferrous metal >1.0mm, 300 series stainless steel >1.5mm. Practically free of extraneous vegetable matter and other foreign material based on processing capabilities.
- Product is Kosher
Color: White to pale yellow. White after re-hydration.
Hydration (Diced): Allow 10-15 minutes in boiling water, and 1-2 hours in cold water. The typical re-hydration ratio is about 1:10 (dry: fresh).
Hydration (Powder): Powder is instant. The typical re-hydration ratio is about 1:10 (dry: fresh).
Storage:
- Recommended storage is in a cool dry area.
- Shelf life under normal conditions is 24 months.
